- ½ English cucumber (diced)
- 1 dry pint cherry or grape tomatoes (halved)
- 1 small yellow bell pepper (diced)
- 1 ripe avocado (diced)
- ½ red onion (very thinly sliced)
- ¼ cup Italian parsley (chopped)
- 1 head romaine lettuce (finely chopped (about 4 cups lettuce)
- 1 cup canned chickpeas (drained and rinsed)
- 4 ounces feta cheese (cubed or coarsely crumbled)
- ½ lemon (juiced)
- 1 large clove garlic (grated or finely minced)
- ¾ teaspoons dried oregano
- 2 tablespoons extra virgin olive oil
- Salt
- Fresh ground pepper

In a small bowl, whisk together all the ingredients for the dressing. Briefly set aside.
