- 100g wild rice
- 100g red rice
- Large handful of small plum tomatoes
- 200g piquillo peppers
- 5 oz roasted almonds
- 9 oz rocket
- handful of sunflower seeds
- pinch of sea salt

Preparation
Step 1
Cook the rice according to the packet instructions. Once cooked, drain and tip into a large bowl.
Step 2
Add all of the remaining ingredients and give everything a really good mix. Stir through the dressing and sprinkle with sunflower seeds, before serving.
