- 1 head cauliflower
- 1 x 14 oz tin butter beans
- 4 small shallots
- 1 leek
- ½ small bunch parsley
- drizzle of olive oil

Preparation
Step 1
Fill a large pot (one that will fit the cauliflower) with water and bring to the boil. Once boiling, carefully lower the whole cauliflower into the water and cover with a lid. Simmer for 10 minutes until soft, then drain.
Step 2
Preheat the oven to 180°C fan / 400°F. Meanwhile make the sauce, soak the cashews in boiling water for 5 minutes until slightly softened. Drain and put into a blender, along with the remaining sauce ingredients and ½ of the butter beans. Blitz to create a smooth, thick and creamy sauce. Season to taste.
Step 3
Put the remaining butter beans, shredded cauliflower leaves, shallots and sliced leek in a small baking dish (25 x 18 x 5cm / 10 x 7 x 2″). Pour over ½ of the sauce.
Step 4
Place the cauliflower in the centre of the dish and pour over the remaining sauce. Let the sauce fall down the sides of the cauliflower and mix any fallen sauce with the veg in the dish. Drizzle over some oil.
Step 5
Roast for around 30 minutes until the cauliflower is golden. Sprinkle with parsley and serve.
