  • 6 tablespoons olive oil
  • 3 tablespoons plain white flour
  • 4 sprigs rosemary
  • 4 cloves garlic
  • pinch of flaky sea salt

Preparation

Step 1

Preheat the oven to 200°C fan / 425°F. Bring a large saucepan of water to the boil, add the bicarbonate of soda and reduce to a simmer. Add the potatoes and cook for 8–10 minutes until soft enough to put a knife through. Drain and leave to steam dry for 10 minutes.

Step 2

Meanwhile, place the oil in a large roasting tin. Heat in the oven for 10 minutes, while the potatoes are steam drying. Then toss the potatoes with the flour to thinly and evenly coat. Once the oil is hot, remove the roasting tin from the oven and carefully add the potatoes; toss in the oil and add the rosemary and garlic cloves. Roast for 55–60 minutes, turning the potatoes halfway through. Season with a sprinkling of flaky sea salt, to serve.
