Ingredients

2 servings
  • 2–4 slices bread
  • 7 oz cherry tomatoes
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons smooth tahini
  • handful of coriander
  • 1 tablespoon nutritional yeast
  • 1 lime
  • pinch of sea salt
  • pinch of sea salt & black pepper
  • pinch of dried red chilli flakes

Preparation

Step 1

Roughly chop the tomatoes and place into a large bowl. Stir through the olive oil, tahini, nutritional yeast, lime juice, chopped garlic, coriander and a large pinch of salt. Cover and leave to one side for 10 minutes to allow the flavours to infuse.

Step 2

Once ready to enjoy, toast the bread.

Step 3

Spoon the tomato mixture on top of the toast and sprinkle with a pinch of pepper and some chilli flakes.
