  • ½–1 teaspoon dried red chilli flakes
  • 2 teaspoons smoked paprika
  • 2 tablespoons maple syrup
  • pinch flaky sea salt

Preparation

Step 1

Preheat oven to 180°C / 160°C fan / 350°F. Place the peanuts on a baking tray and roast for 12-15 minutes until darkened, fragrant and beginning to release their oils.

Step 2

Add the nuts to a food processor and blend until smooth and creamy, stopping to take breaks if you’re concerned about your machine overheating.

Step 3

Add the chilli flakes, smoked paprika, maple syrup and flaky sea salt. The mixture will seize slightly once these are added due to the change in temperature but it will return to smooth and glossy with several more minutes of blending.

Step 4

Pour into a jar and store at room temperature for up to three months.
