- 2 sweet potatoes
- 2 parsnips
- 1 small red onion
- 2 cloves garlic
- 1 x 14 fl oz tin coconut milk
- 2 tablespoons harissa paste
- 1 tablespoon olive oil
- pinch of sea salt

Preparation
Step 1
Place the sweet potato and parsnip into a pan of salted water over a medium heat and boil for 30-35 minutes until soft.
Step 2
Once cooked, drain and leave to one side.
Step 3
Put the onions and garlic into a pan over a medium heat and drizzle with a little olive oil - cook for 5-10 minutes until soft.
Step 4
Add the sweet potato, parsnip and coconut milk and cook for 10-15 minutes until everything has softened.
Step 5
Blitz everything together using a hand blender until smooth. Either stir through the harissa now, or add it as a dollop on top at the end.
