  • 3 ripe bananas
  • 1 lemon
  • 4 Medjool dates
  • 2 tablespoons shelled hemp seeds
  • 1 tablespoon chia seeds
  • 185ml plant milk
  • 5.3 oz self-raising flour
  • 2 tablespoons coconut oil

Preparation

Step 1

Place the bananas, lemon zest, dates, hemp seeds, chia seeds and plant milk in a food processor and blitz on a high speed for a couple of minutes until well combined and there are no lumps.

Step 2

Add the flour and blitz again until you have a thick batter.

Step 3

Heat a little coconut oil in a non-stick frying pan over a medium heat and fry large spoonfuls of the batter for a couple of minutes on each side. You will need to spread the mixture out a little to make 8–10cm / 3–4″ pancakes.

Step 4

Keep the cooked pancakes warm (under a tea towel) while you use up the remaining batter.

Step 5

Serve the pancakes with your choice of compote or berries, some coconut yoghurt, more hemp seeds or chopped nuts and a drizzle of maple syrup.
