Ingredients
2 servings
- 5 oz brown basmati rice
- 1 red pepper
- 7 oz tenderstem broccoli
- 1 small red onion
- 2 cloves garlic
- 2 spring onions
- 2 tablespoons smooth tahini
- 1 tablespoon tamari
- 1 tablespoon toasted sesame oil
- 2 limes
- pinch of sesame seeds
- drizzle of olive oil
- pinch of sea salt

Preparation
Step 1
Place a large pan over a medium heat and add a drizzle of olive oil. Once warm, add the red onion, garlic and a large pinch of salt. Cook for 5 minutes before adding the sliced red pepper and broccoli. Cook for a few minutes until the vegetables turn soft but still have a bite.
Step 2
Cook the rice according to the instructions on the pack. Once cooked, remove from the heat and stir through the pan of vegetables.
Step 3
In a small bowl, mix together the tahini, tamari, sesame oil and the juice of 1 lime. Pour the mixture over the rice and mix well until everything is coated in the dressing.
Step 4
Spoon into bowls and top with a squeeze of fresh lime juice, sliced spring onions and a pinch of sesame seeds.
