- ½ 400g tin of chickpeas
- 1 lemons
- 2 teaspoons of tahini
- 1 tomatoes
- 1 slice good-quality sourdough bread
- 1 clove garlic
- tablespoon olive oil
- a sprinkle of sumac
- sprinkle of flat-leaf parsley
- a pinch of flaky sea salt

Preparation
Step 1
Zest half of the lemon; set zest aside. Roughly mash the chickpeas with either a fork or a potato masher in a medium bowl. Squeeze over some fresh lemon juice, add the tahini, and stir to combine. Don’t worry about getting it smooth as this is a rough, chunky mix. Stir in the tomato.
Step 2
Rub the warm toast with the clove of garlic. Place toast on a plate and spoon over the chickpea-tomato mixture. Drizzle with olive oil, sprinkle the lemon zest on top, and squeeze over some more lemon juice. Top with sumac, parsley, and some flaky sea salt.
