- 1 medium sweet potatoes
- 1 tablespoon olive oil
- 2 large handfuls of kale
- ½ lemons
- 2 teaspoons extra virgin olive oil
- pinch of sea salt
- 1 magic dressing
- sprinkle of pomegranate seeds
- a sprinkle of nigella seeds

Preparation
Step 1
Preheat the oven to 200°C / 180°C fan.
Step 2
Brush the sweet potato wedges with olive oil on a baking tray. Bake until tender when pierces with a fork, 18-20 minutes. Let cool slightly while you assemble the salad.
Step 3
Mix the kale, lemon juice, and olive oil in a medium bowl and massage, using clean hands, until tender, 2-3 minutes. Season with salt to taste. Serve and top with the sweet potato wedges, drizzle over the spicy harissa dressing and sprinkle with pomegranate seeds.
