Ingredients
4 servings
- 2 tablespoons olive/sesame oil
- 2 peppers
- 10 oz firm tofu
- 4 cloves garlic
- 2 teaspoons smoked paprika
- ½ teaspoon dried red chilli flakes
- 500g cooked rice
- 2 limes
- 2–3 tablespoons soy sauce/tamari
- bunch of spring onions

Preparation
Step 1
Heat 1 tablespoon of oil in a large frying pan over high heat. Add the peppers and tofu and cook for 6–8 minutes until the peppers have softened and the tofu is turning golden. Avoid moving it around the pan, so that it has a chance to colour.
Step 2
Add 1 more tablespoon of oil, the garlic, smoked paprika, chilli flakes and rice; stir so that everything is coated. Turn up the heat to high and fry for 3 minutes until the rice is warm.
Step 3
Add the lime zest and juice, soy sauce and spring onions; toss to combine. Serve with extra spring onions, soy and a sprinkling of chilli flakes.
