- 3.5 oz coconut sugar
- 75g coconut oil
- 3.2 oz oat flour
- 2.5 oz buckwheat flour
- 2.1 oz brown rice flour
- ½ teaspoon baking powder
- 70g 70% cocoa dark chocolate
- 1 fl oz water
- pinch of sea salt

Preparation
Step 1
Preheat oven to 170C (325F), fan setting.
Step 2
Gently melt the coconut oil over a low heat, ensuring it never comes to the boil. Once melted, remove from the heat and leave to cool for a minute or so - you want it to come closer to room temperature, but still be in liquid form.
Step 3
Mix the coconut sugar and coconut oil together in a large bowl. Chop the dark chocolate into small chunks.
Step 4
Add the ground oats, both kinds of flour, baking powder, water, salt and chocolate pieces and stir well.
Step 5
Leave the mix to sit for 5 minutes then shape the dough into twelve balls, and gently squish them – they’ll spread as they cook so don’t flatten them totally into cookies.
Step 6
Place the balls onto a baking tray. Space them out evenly across the baking tray, leaving at least 3cm between each ball (as they will expand).
Step 7
Cook for 12 minutes, until golden.
Step 8
After 12 minutes, remove from the oven and leave to cool a little - they will continue to set during this time.
