- 240g canned chickpeas
- 1 ripe avocados
- ½ small red onions
- 1 tablespoon balsamic vinegar
- ½ lemons
- 1 slice bread
- 1 handful of parsley
- tablespoon olive oil
- large pinch of sea salt

Preparation
Step 1
Drain and wash the chickpeas. Cut the avocado into bite-sized chunks. Peel and finely dice the red onion.
Step 2
Place the drained chickpeas, red onion and avocado in a bowl and mix through the balsamic vinegar, lemon juice, a drizzle of olive oil and a large pinch of salt.
Step 3
If you would like to add some crunchy croutons, place a frying pan over medium–high heat. Add a generous drizzle of olive oil and add the pieces of bread. Cook for about 5–6 minutes, tossing occasionally, until golden brown and crunchy.
Step 4
Mix everything together well, before serving topped with a handful of chopped parsley.
