  • 18 oz potatoes
  • 6 sprigs rosemary
  • 4 garlic
  • 1 tablespoon olive oil
  • pinch of sea salt & black pepper

Preparation

Step 1

Preheat the oven to Preheat oven to 200°C / 180°C fan / 400°F.

Step 2

Place the potatoes halves in a pan of boiling water over a medium heat.

Step 3

Boil for 10-15 minutes until the potatoes have just become soft. Remove from the heat and drain, then return to the saucepan and gently toss them around to break up the edges of each piece.

Step 4

Once the potatoes have been boiled, place them in a baking tray with a drizzle of olive oil, sea salt, pepper, whole garlic cloves and rosemary sprigs.

Step 5

Give it all a really good mix together and place in the oven to cook for 40-45 minutes until golden. At this point, remove from the oven and sprinkle with sea salt and pepper.
