- 4 slices bread
- ½ of a butternut squash
- 1 handful of rocket
- drizzle of olive oil
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 190C (375F), fan setting.
Step 2
Place the butternut squash slices onto a baking tray and drizzle with olive oil and a pinch of salt. Cook for 30 minutes until soft. Once soft, remove from the oven and leave to one side.
Step 3
While the butternut squash cooks, place the cashew sauce ingredients into a powerful blender and blend until smooth.
Step 4
Assemble the sandwiches; spoon 1 tablespoon of cashew sauce onto the bottom of 2 pieces of bread and top each with half of the roasted butternut squash and a small handful of rocket. Top each with another piece of bread.
