- 5 oz red lentils
- 4 large carrots
- 1 small red onion
- 2 cloves garlic
- 1.7 oz gram flour
- ½ teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 tablespoon coconut oil
- pinch of sea salt

Preparation
Step 1
Cook the lentils according to packet instructions. Once cooked, set aside to cool.
Step 2
Once the lentils have cooled, combine them in a large bowl with the remainder of the ingredients. Mix well, adding a dash of water if the mixture feels too dry. Set aside for 5 minutes.
Step 3
Scoop large spoonfuls of the mixture and, using clean hands, shape into patties. The mixture should make around 12 fritters.
Step 4
Heat a little coconut oil in a pan over medium–high heat and once hot, place 3–4 fritters in the pan. Cook for 5–10 minutes on each side until golden on the outside and cooked through. Repeat until all of the fritters are cooked.
