Preparation

Step 1

Cook the noodles according to packet instructions. Drain and run under cold water to halt the cooking process. Set aside while you make the sauce and cook the vegetables.

Step 2

Place a frying pan over high heat and add a drizzle of olive oil. Add the mushrooms and cook until golden, caramelised and reduced. This usually takes about 10 - 15 minutes.

Step 3

While the mushrooms are cooking make the sauce by whisking together the Gochujang, toasted sesame oil, maple syrup and rice vinegar until no lumps remain.

Step 4

When the mushrooms are done to your liking add the spinach to the pan and cook until it has wilted, this usually only takes a minute or two. Then add the noodles and sauce, and toss until everything is coated and glossy.

Step 5

Serve immediately, garnishing with spring onions and sesame seeds if desired.
