- 1 small red onion
- 4 cloves garlic
- 2 carrots
- 1.8 oz sun-dried tomatoes
- 1 large handful of walnuts
- 1 x 14 oz tin butter beans
- 1 lemon
- 1 handful of rocket
- drizzle of olive oil
- pinch of sea salt

Preparation
Step 1
Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the sliced onion, garlic, carrots, sun-dried tomatoes, walnuts and a pinch of salt. Mix well and cook for 5–10 minutes until everything becomes soft.
Step 2
Mix through the drained butter beans and cook for 5 minutes until the beans are slightly crispy. At this point, stir through the lemon juice, rocket and a pinch more salt (if needed) and serve.
