  • 1.8 oz pine nuts
  • 1.7 oz sunflower seeds
  • 2 cloves garlic
  • 0.7 oz basil
  • 4 tablespoons of water
  • 2 tablespoons olive oil
  • pinch of sea salt

Preparation

Step 1

Make the pesto by placing all of the ingredients, apart from the water, into a blender and blend.

Step 2

Add the water bit by bit until you reach the consistency you like best.

Step 3

Place a pan over a medium heat and add a drizzle of olive oil.

Step 4

Once warm, add the mushrooms, garlic and a large pinch of salt - and mix well. Leave to cook for 10 minutes until the mushrooms are soft and smell delicious, giving it a mix every few minutes.

Step 5

Once cooked, mix 2 tablespoons of the pesto through the mushrooms.

Step 6

Once ready to serve, toast the bread. Spoon a dollop of pesto over each slice of toast and smooth over. Top with fresh rocket and equal amounts of the mushrooms. Top with freshly cracked pepper.
