- 300g silken tofu
- 3.5 oz cashews
- 3 tablespoons of cashew butter
- 1 teaspoon vanilla powder
- large pinch of sea salt
- 3 tablespoons of brown rice syrup

Preparation
Step 1
Drain the cashews and place into a food processor, pulse until smooth.
Step 2
Add the rest of the ingredients and pulse until the mixture becomes smooth.
Step 3
Divide the mixture evenly between 2 ramekins for a large portion or 4 for a smaller portion, and place in the fridge to set for 2 hours.
Step 4
Top with a sprinkle of coconut sugar or desiccated coconut before serving.
