- 9 oz self-raising flour
- ½ teaspoon chia seeds
- 9 fl oz soya milk
- 1 tablespoon maple syrup
- 1½ tablespoons olive oil
- pinch of sea salt

Preparation
Step 1
Put the flour, chia seeds and a pinch of salt into a large bowl and gradually whisk in the milk, maple syrup and oil. Leave the mixture for 5–10 minutes to thicken.
Step 2
Meanwhile, place a frying pan over medium–high heat and add the peaches and maple syrup. Cook for 4–5 minutes, tossing occasionally, until the peaches are sticky and cooked through.
Step 3
To cook the pancakes, pour a drizzle of olive oil in a large frying pan over medium heat. Once hot, add 2–3 tablespoons of the pancake batter; after 2 minutes the pancakes should begin to bubble on top, at this point, flip and cook for another 2 minutes. Repeat with all of the pancake batter — it should make around 8 pancakes.
Step 4
Serve the pancakes topped with the peaches, a drizzle of maple syrup and a sprinkle of chopped nuts, nut butter or a little yoghurt.
