Ingredients

- 1.8 oz coconut chips
- 2 tablespoons coconut oil
- 2 teaspoons of vanilla powder
- 0.5 oz quinoa puffs
- 2.5 oz dried goji berries
- 3.1 oz pumpkin seeds
- 3 oz sunflower seeds
- 1 tablespoon maple syrup
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 110C (230F), fan setting.
Step 2
Peel the bananas and slice thinly, about ⅛ inch thick.
Step 3
Line a baking tray with baking paper and spread out the banana slices on top.
Step 4
Drizzle with the juice of half lemon and sprinkle on the teaspoon of cinnamon.
Step 5
Bake for 45 minutes, then remove from the oven, flip each banana slice over, sprinkle with another teaspoon of cinnamon and then bake for another 45 minutes.
Step 6
Whilst these are baking, prepare the rest of the trail mix: melt the coconut oil in a small saucepan and stir in the vanilla powder.
Step 7
Mix the sunflower seeds, pumpkin seeds, puffed quinoa and coconut chips in a mixing bowl.
Step 8
Add the maple syrup and pour over the melted coconut oil.
Step 9
Mix everything together and make sure that everything is coated.
Step 10
Line a baking tray with baking paper and pour the mix onto the tray.
Step 11
Once the banana chips are ready, remove from the oven and leave to cool, this helps them become even crispier!
Step 12
Turn the oven up to 180C, fan setting and bake the trail mix for about 10-15 minutes, giving it a mix halfway through, until the coconut chips turn golden brown.
Step 13
Once these are done, take them out of the oven and leave them to cool on the side for about 10 minutes so it becomes really crunchy.
Step 14
Once cool, add in the goji berries and banana chips, give it a good mix and enjoy!
