- 2 tablespoons ground flaxseeds
- 7 oz jumbo oats
- handful of raisins
- 2 apple
- 1 orange
- 2 handfuls of mixed seeds
- large handful of nuts
- 6 tablespoons almond butter
- 1 banana
- drizzle of maple syrup
- pinch of flaky sea salt

Preparation
Step 1
Preheat the oven to 160°C fan. Line a shallow baking tin (about 20 x 30cm / 8 x 12”) with baking parchment. In a small bowl, mix the flaxseeds with 6 tablespoons of water; set aside for 10 minutes to thicken.
Step 2
In a large bowl, mix together the oats, raisins, apple, orange zest (if using), seeds, nuts and a pinch of salt (if using); stir through the almond butter.
Step 3
Pour the flaxseed mixture into the bowl, along with the banana and mix until evenly combined. Transfer the mixture to the baking tray and press into a smooth, even layer using the back of a spoon or a spatula.
Step 4
Bake for 35 minutes until golden. Remove from the oven, drizzle over a little maple syrup (if using) and cool completely on a wire rack before slicing into squares. Store in a sealed container for up to 5 days.
