Ingredients
3 servings
- 1.6 lb new potatoes
- ½ small red onions
- 3 tablespoons apple cider vinegar
- 1 teaspoon coconut sugar
- 1 large handful of pitted black olives
- 1 large handful of pitted green olives
- 2 oz rocket
- 1 lemon
- 1 tablespoon wholegrain mustard
- drizzle of olive oil
- pinch of sea salt & black pepper

Preparation
Step 1
Preheat oven to 220°C fan / 425°F. Place the halved new potatoes on a large baking tray with a drizzle of olive oil and a large pinch of salt. Cook for 30–35 minutes until the potatoes are golden and soft in the centre.
Step 2
While the potatoes cook, place the sliced red onion in a bowl and pour over the apple cider vinegar, coconut sugar and a pinch of salt. Mix well and set aside until needed.
Step 3
Once the potatoes are cooked, remove from the oven and place into a large mixing bowl. Drain and add the sliced red onion, olives, rocket, lemon juice, lemon zest, wholegrain mustard, a drizzle of olive oil and a large pinch of salt and pepper.
Step 4
Mix really well before spooning onto serving plates with a pinch more pepper.
