- 250g brown rice
- 250g red rice
- 5 oz roasted almonds
- 3.5 oz sultanas
- 7 oz sun-dried tomatoes
- 1 handful of parsley
- 1 small handful of mint leaves
- pinch of sea salt

Preparation
Step 1
Cook the rice according to the packet instructions. Then drain and place into a large bowl.
Step 2
Add all the remaining ingredients to the bowl and give everything a really good mix.
