- 2 tablespoons almonds
- 2 tablespoons mixed seeds
- large handful of coconut flakes
- ½ teaspoon ground cinnamon
- 1–2 maple syrup

Preparation
Step 1
Warm a small frying pan set over medium–low heat; add the almonds, seeds, coconut flakes, cinnamon and maple syrup (if using); cook gently for 4–5 minutes until fragrant and just golden. Remove from the heat and set aside to cool.
Step 2
Next, place the mango, coconut milk, lime zest, lime juice, turmeric (if using) and a pinch of sea salt (if using; this helps to balance the sweetness) in a high-speed blender; blitz until smooth. Stir in the chia seeds and leave to stand for a few minutes to thicken.
Step 3
To serve, pour the mango mixture into bowls and decorate with the banana and toasted coconut topping. Serve immediately.
