Ingredients

- 1 onion
- 2 cloves garlic
- 2 carrots
- 2 tablespoons tomato purée
- 240g canned cooked green lentils
- 2x 400g cans of chopped tomatoes
- 9 fl oz water
- 300g spaghetti
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- pinch of sea salt

Preparation
Step 1
Place the chopped onion, garlic, carrots, a drizzle of olive oil and a pinch of salt in a pan over a medium heat and cook for 5-10 minutes until soft.
Step 2
Add in the paprika and cumin and cook for another 3 minutes before adding in the tomato puree, tinned tomatoes, water and lentils, cook for 30-35 minutes until the lentils are really soft.
Step 3
While the lentil sauce is cooking, place the pasta in a pan of salted water over a medium heat and cook as per instructions on pack.
Step 4
Once cooked, drain and remove – keeping some of the drained water.
Step 5
Once the pasta sauce is ready, add the drained pasta into the pan, along with a little of the water if needed.
Step 6
Give everything a really good stir before serving.
