Ingredients
2 servings
- 3.5 oz quinoa
- 1 yellow pepper
- 1 red pepper
- 1 handful of parsley
- Handful of roasted almonds
- 1 handful sunflower seeds
- 1 large handful of rocket
- drizzle of olive oil
- 1 lemon
- 1 tablespoon tahini
- pinch of sea salt
- pinch of sea salt & black pepper
- pinch of dried red chilli flakes

Preparation
Step 1
Cook the quinoa according to the instructions on the pack. Once cooked, drain and place into a large mixing bowl.
Step 2
Add the diced peppers, chopped parsley, roasted almonds, sunflower seeds, rocket and mix well.
Step 3
Squeeze in the lemon juice and add a drizzle of olive oil, the tahini, a large pinch of salt and pepper, mix well until everything is coated in the dressing ingredients.
Step 4
Spoon the salad into two bowls and top with another pinch of pepper and some chilli flakes (if using).
