- 4 super ripe bananas
- 7 oz pitted dates
- 5 tablespoons olive oil
- 4 tablespoons coconut yoghurt
- 2 teaspoons vanilla bean paste
- 4 oz plain flour
- 2 oz white spelt flour
- 2 teaspoons baking powder
- 1 tablespoon ground flaxseeds
- ½ teaspoon fine sea salt
- 3.5 oz 70% cocoa dark chocolate
- 3.5 oz walnuts

Preparation
Step 1
Preheat the oven to 160°C fan / 350°F. Line a 1kg / 2 lb loaf tin with baking parchment.
Step 2
First, add the banana, dates, olive oil, yoghurt and vanilla paste to a food processor; blitz until the dates have mostly broken down.
Step 3
Sift the plain flour, spelt flour and baking powder into the food processor; then add the ground flaxseeds and salt. Pulse very briefly, for about 2–3 seconds, until the flour is just mixed in.
Step 4
Add the chocolate (if using) and walnuts (if using), reserving a small amount for topping. Pulse again until just combined.
Step 5
Pour the mixture in the tin and scatter over the remaining chocolate and walnuts (if using). Bake for 45–50 minutes, until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool on a wire rack before serving. Delicious with a cup of coffee.
