- 1 tablespoon sunflower oil
- 1 small red onion
- 3 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon hot chilli powder
- 1 teaspoon paprika
- 2 tablespoons tomato purée
- 2 tablespoons harissa paste
- 2 x 14 oz tins jackfruit
- pinch of sea salt

Preparation
Step 1
Drain and rinse the jackfruit. Heat a drizzle of oil in a pan over medium heat. Once warm, add the onion and garlic and cook for 10 minutes until soft.
Step 2
Add the spices and cook for another 3 minutes, before adding the tomato purée and harissa paste; cook for 5 minutes.
Step 3
Reduce the heat and add the jackfruit. Mix really well to ensure everything is coated in the spices. Season with salt and cook for 20–25 minutes, constantly stirring.
Step 4
Once the jackfruit is really soft, pull it apart using a large spoon or fork.
Step 5
Allow to cool slightly before shaping into burgers. Place them on a tray and put it in the fridge for 30 minutes to allow the burgers to firm up.
Step 6
Once ready to serve, pan-fry the burgers in sunflower oil about 3–4 minutes on each side until brown.
