- 5.3 oz kale
- 1 handful of spinach
- ½ batch of chermoula recipe
- 1 batch of roasted runner beans recipe
- 1 x 14 oz tin mixed beans
- 1 x 3.5 oz jar roasted red peppers
- 2 tablespoons sunflower seeds
- 1 red chilli
- 2 pittas

Preparation
Step 1
Place the kale and spinach in a large bowl and toss with the chermoula to coat, massaging it into the leaves for a few minutes. Add the roasted runner beans, mixed beans, peppers, most of the seeds and the chilli; toss to combine.
Step 2
Toast the pittas; then chop into bite-sized pieces. Toss ½ of the pitta pieces through ½ of the salad. Transfer to a bowl and serve with a sprinkling of the remaining seeds and chilli on top. Save the remaining salad and put in an airtight container in the fridge for the next day. Put the remaining pitta pieces in an airtight container at room temperature, until needed.
