  • 5.3 oz orzo
  • 5 oz medium–firm tofu
  • ½ cucumbers
  • 2.6 oz sun-dried tomatoes
  • 4.4 oz cherry tomatoes
  • 1 small red onion
  • 0.7 oz basil
  • 1.8 oz black olives
  • 2 tablespoons toasted pine nuts

Preparation

Step 1

Cook the orzo in salted water, according to packet instructions. Place a steaming basket over the boiling water and steam the tofu as the orzo cooks. Once the orzo is perfectly al dente, drain and rinse with cold water to remove the starch and cool completely. Put into a large bowl, alongside the tofu, and leave to cool for a few minutes.

Step 2

While the orzo and tofu cook, chop the veg. Then once the orzo has cooled a little, add all of the veg to the orzo bowl. Toss to combine.

Step 3

In a small bowl, whisk together all of the dressing ingredients. Pour over the orzo salad and toss to coat.

Step 4

Serve in bowls, garnished with toasted pine nuts and a sprinkle of basil leaves.
