- 12 pitted Medjool dates
- 4.6 oz roasted almonds
- 4.5 oz unsalted roasted cashews
- 5.6 oz raisins
- 3 teaspoons ground ginger

Preparation
Step 1
Place the nuts in a food processor and pulse until a powder forms, around 5 minutes.
Step 2
Add in the dates, ginger and half of the raisins and pulse again until a paste forms.
Step 3
Once well combined, add in the final raisins and pulse quickly to mix through.
Step 4
Spoon the mixture into a lined baking tray and push down well to ensure the mixture is evenly spread.
Step 5
Place in the freezer for 30 minutes to set.
Step 6
Once set, cut into equal bars and store in the fridge.
