- 2 large carrots
- 1 teaspoon ginger
- 225ml apple cider vinegar
- 5 tablespoons of brown rice syrup

Preparation
Step 1
Place the vinegar and brown rice syrup in a small saucepan over medium heat and bring to a simmer. Allow to bubble for about 1 minute.
Step 2
Place the carrots and ginger in a medium bowl and pour over the hot vinegar mixture.
Step 3
Let the carrot mixture cool to room temperature. Transfer to a clean jar and store in the fridge for up to two weeks.
