- 1 mango
- 1 ripe avocados
- 1 jalapeño

Preparation
Step 1
Firstly, make the mango dipping sauce. Put the mango, avocado flesh and jalapeño in a food processor. Blend until smooth and pour into a small bowl.
Step 2
To make the rolls, simply take 1 rice paper and place into a bowl of warm water for 2 seconds, then allow to soften for another few seconds.
Step 3
Once soft, lay the rice paper on a clean work surface, place a lettuce leaf in the middle, drizzle over a teaspoon of the mango sauce, top with a mix of the vegetable strips and sprinkle with the coriander.
Step 4
Fold the top and the bottom of the paper over, then roll. It may take practice to get it perfect but it always tastes good, even if it doesn’t look perfect on the first try. Repeat with the remaining rice paper wrappers. Serve the summer rolls with the leftover sauce for extra dipping.
