  • 1 teaspoon olive oil
  • 5.3 oz baby chestnut mushrooms
  • 3 baby pak choi
  • 10 oz udon noodles
  • 3.5 oz frozen edamame beans
  • bunch of spring onions
  • 1 red chilli
  • 1 teaspoon black sesame seeds

Preparation

Step 1

Cook the noodles according to packet instructions. Drain and run under cold water to halt the cooking process. Set aside while you cook the vegetables and make the sauce.

Step 2

Drizzle the oil in a large frying pan over medium heat and add the mushrooms; fry for 5 minutes until soft and golden. Add the pak choi and fry for a further 2 minutes, until slightly softened.

Step 3

Meanwhile, mix together all of the sauce ingredients.

Step 4

Pour the sauce into the pan with the vegetables, over medium heat, and mix until everything is coated; add the udon noodles. Fry until everything is heated through and coated in a thick glossy sauce — add a splash more water if the sauce is too thick.

Step 5

Mix in the edamame and spring onions. Serve topped with a sprinkle of red chilli (if using), sesame seeds and a little extra chilli oil, if you like.
