  • 6.5 oz porridge oats
  • 6 tablespoons of buckwheat flour
  • 1.7 oz ground almonds
  • 1.7 oz coconut sugar
  • 6 tablespoons maple syrup
  • 2 tablespoons almond milk
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon

Preparation

Step 1

Place all of the ingredients into a food processor and pulse until a dough forms.

Step 2

Roll the dough into a ball - cover and leave to chill in the fridge for at least 30 minutes.

Step 3

After 30 minutes, preheat the oven to 180C (350F), fan setting.

Step 4

Sprinkle a little flour over a work surface and roll out the dough using a rolling pin, you want the dough to be about 1 cm thick.

Step 5

Cut into shapes using a cookie cutter or the rim of a glass and place onto a baking tray.

Step 6

Bake for 10-15 minutes until golden, and then remove and leave to cool.
