Preparation
Step 1
Preheat oven to 210°C / 190°C fan / 410°F. Line a 12-hole muffin tray with melted coconut oil.
Step 2
Place the almond butter, maple syrup and plain flour into a food processor and blend until the mixture comes together. Add the almonds and blend again until the mixture thickens and breaks down the almonds to little pieces; stop blending once the mixture forms a thick dough, keeping some small chunks of almonds.
Step 3
Spoon equal amounts of the mixture into the lined muffin tray holes and press each down with the back of a spoon to even out.
Step 4
Bake for 10 minutes until golden; then remove from the oven and leave to cool a little.
Step 5
Place the almond butter, 40ml / 1.5 fl oz water and the dark chocolate into a small pan over low heat; cook until the mixture melts and becomes smooth.
Step 6
Pour equal amounts of the chocolate ganache onto the tart bases. Sprinkle each with flaked almonds and a pinch of flaky sea salt. Place in the fridge to set; this will take at least 1 hour.
