- 4 wholemeal bread
- ¼ cucumbers

Preparation
Step 1
Soak the cashews in boiling water for 15 minutes so that they soften slightly. Drain and put in a food processor with the milk, nutritional yeast, lemon zest and juice, pepper and salt. Blitz until you have a creamy paste and then fold in the chives.
Step 2
Spread onto your slices of bread. Top 2 slices with the cucumber and then sandwich together with the remaining 2 slices of bread. Cut each sandwich into 4 triangles and enjoy.
