- 1.6 lb new potatoes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- large handful of spinach
- 1 tablespoon olive oil
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 220°C / 200°C fan / 425°F
Step 2
Mix the potatoes with a good drizzle of olive oil, some salt and all the spices in a baking tray.
Step 3
Cook for 35–40 minutes, until soft and golden, before removing from the oven and transferring to a pan.
Step 4
Place the pan over a medium heat and add the spinach - cook until the spinach has wilted.
