- 3 aubergines
- 3 tablespoons peanut butter
- 1 x 14 oz tin butter beans
- 2 tablespoons brown/white miso paste
- 1 clove garlic
- 1 x 1½″ piece ginger
- 2 lemons
- 3 tablespoons olive oil
- 1 tablespoon maple syrup

Preparation
Step 1
Preheat oven to 180°C fan / 400°F. Pierce the aubergine all over with a knife and roast for 40–45 minutes until soft and blackened on the outside. Leave to cool.
Step 2
Scoop the inside of the aubergine into a blender, discarding the skin. Add the remaining ingredients. Blitz to create a smooth dip and lightly season.
