- 75g dried pasta
- 1 large handful of peas
- 2 tablespoons coconut yoghurt
- ½ lemons
- 1 handful of spinach
- drizzle of olive oil
- pinch of sea salt & black pepper

Preparation
Step 1
Start by cooking the pasta. Bring a pan of salted water to the boil. Once boiling, add the pasta and simmer until cooked, adding the peas in the last few minutes.
Step 2
Once the pasta is cooked, drain and spoon back into the pan. Stir through the yoghurt, lemon juice, spinach, a drizzle of olive oil and a pinch of salt and pepper.
Step 3
Give everything a good stir over low heat, until the spinach is wilted, before serving.
