  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 1 lime
  • pinch of sea salt

Preparation

Step 1

Slice the courgettes into thin ribbons using a mandoline or peeler.

Step 2

Once you have your ribbons, place them in a large bowl with the coriander, chilli, olive oil, apple cider vinegar, lime juice and salt.

Step 3

Mix well and leave to one side for at least 30 minutes to allow the flavours to infuse.

Step 4

Once ready to serve, heat the wraps slightly in a warm oven, before piling high with the courgette ribbons, mango salsa and guacamole (or sliced avocado.)
