- 1 peeled and grated red apples
- Zest of 1 oranges
- 2 fl oz orange juice
- 1.2 oz dried cranberries
- 2.4 oz raisins
- 4 pitted and chopped Medjool dates
- 1 tablespoon melted coconut oil
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon

Preparation
Step 1
Place all of the filling ingredients into a pan over a medium heat and cook for 35-40 minutes until soft and all comes together. You may need to add a splash of water every now and again to keep it from burning on the bottom.
Step 2
While the filling is cooking, make the pastry by placing all of the ingredients into a food processor and pulsing until it all comes together to form a dough. Spoon the dough out onto a slightly floured work surface and knead a little with your hands, not a lot - only to bring the dough together. Once the dough is nice and firm, place into the fridge to cool.
Step 3
Once the filling mixture is ready, and the dough has had time to cool - preheat oven to 180c, fan setting and lightly oil a 12 hole muffin tray.
Step 4
Roll the pastry out onto a lightly floured work surface and roll out flat using a rolling pin until about 1cm thick.
Step 5
Cut 12 large circles into the pastry and place into the muffin tray holes, push each down around the edges to form a cup shape. Reroll the remaining pastry and using a small circle or star cookie cutter, cut out 12 smaller pastry circles/stars.
Step 6
Spoon equal amounts of the filling into each pastry cup before covering with a smaller pastry circle/star. Brush with almond milk.
Step 7
Cook for 10-15 minutes until golden.
