- 2 cloves garlic
- 1 onion
- 3.5 oz mixed mushrooms
- large handful of spinach
- 2 tablespoons cashew cream
- 1 tablespoon olive oil
- pinch of sea salt

Preparation
Step 1
To make the mushroom topping, simply place a pan over medium heat and add a drizzle of olive oil. Once warm, add the garlic and onion and cook for 5–10 minutes until soft.
Step 2
Once soft, add the mushrooms and cook for 5–10 minutes until golden. Stir through the spinach and cook for a couple of minutes until wilted.
Step 3
To make the crêpes, stir all of the ingredients together to form a smooth batter.
Step 4
Warm some olive oil in a large pan over medium–high heat and add a few large spoonfuls of the batter into the pan; tilt the pan to spread the mixture to the edges. We usually cook about ¼ of the mixture at a time but this will depend on the size of your pan.
Step 5
Cook on each side for 3 minutes until golden and delicious.
Step 6
Repeat this process with the rest of the batter to make all of your crêpes, it usually makes around 3 depending on the size you’re making.
Step 7
Once ready to serve, pile the crêpes high with a large dollop of cashew cream and some of the mushroom mixture.
