- 3 ripe bananas
- 3.5 oz bircher muesli
- 5.3 oz plain flour
- 7 oz coconut sugar
- 1 teaspoon bicarbonate of soda
- 1 teaspoon baking powder
- 1.7 fl oz almond milk
- 3 tablespoons melted coconut oil

Preparation
Step 1
Preheat the oven to 180C (350F), fan setting. Line a loaf tin with baking parchment.
Step 2
Peel the bananas and place into a large bowl. Mash well with a fork until you get a creamy texture.
Step 3
Once the bananas are creamy, add the rest of the ingredients and mix really well until a batter forms.
Step 4
Pour the mixture into a lined loaf tin and bake in the oven for 40-45 minutes until risen and golden.
