- 1 cauliflower

Preparation
Step 1
Preheat oven to 200C (400F), fan setting.
Step 2
Whisk the batter ingredients in a large mixing bowl, until smooth.
Step 3
Then in a separate bowl, mix the coating ingredients.
Step 4
Dip the cauliflower florets into the batter, shake off any excess batter then roll in the coating, ensuring each floret is fully covered.
Step 5
Place the florets onto a large, lined baking sheet and roast for 30–35 minutes, turning halfway through.
Step 6
Five minutes before the end of the cooking time, remove the tray from the oven and drizzle the cauliflower with olive oil, before placing back in for the final 5 minutes to crisp up.
Step 7
While this cooks, make the sauce by simply whisking all of the ingredients together in a small pan and place over a medium heat. Cook, stirring constantly, until all of the ingredients come together to form a sticky sauce.
Step 8
Then, once the cauliflower is cooked and crunchy, take it out of the oven and serve with the sweet & spicy sauce.
