Ingredients

- 300g dried pasta
- 2 handfuls of cherry tomatoes
- 2 cloves garlic
- drizzle of olive oil
- pinch of sea salt & black pepper

Preparation
Step 1
Cook the pasta according to packet instructions. Once cooked, drain and leave to one side until needed.
Step 2
While the pasta cooks, place all of the sauce ingredients into a powerful food processor and pulse until smooth, adding a dash of water until you reach the consistency you like best.
Step 3
Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the tomatoes, garlic and a sprinkling of salt. Cook for 5–10 minutes until the tomatoes become soft and begin to bubble. Once cooked, spoon into a bowl and leave to one side until needed.
Step 4
Add the drained pasta and sauce to the pan and cook for around 5 minutes until everything is heated through.
Step 5
Serve the pasta in bowls, topped with the tomatoes and a crack of black pepper.
