1 serving
- 2 slices bread
- 1 ripe avocados
- 1 large vine tomatoes
- pinch of sea salt
- 1 large spoonful of kimchi
- ½ lemons

Preparation
Step 1
Place the avocado flesh into a bowl and mash using a fork.
Step 2
Once soft and creamy, add in a pinch of salt and the lemon juice, mix through well.
Step 3
Spoon the avocado onto one side of the bread and the sliced tomatoes onto the other, spoon over the kimchi and sandwich both slices together.
Step 4
Place into a toastie bag and toast for 2 minutes. Alternatively, fry in a lightly oiled frying pan over medium-high heat for 2 minutes on each side.
